Blue Cheese Dressing

My favorite dressing as a child was blue cheese. I didn’t know you could get it outside of very special occasions at restaurant salad bars. It wasn’t until much later that I learned to make it myself and also master the funky cheese that gives it its distinctive flavor.

Blue cheese is one of those cheeses you either love or you hate. With blue cheese, as with many things, “The dose makes the poison”. Blue cheese is very strong and needs to be used judiciously. It’s strong flavor, while dangerous if overused, means you don’t need much to add flavor to a dish, sauce or dressing. This is great because it ain’t cheap. By carefully balancing the cheeses acrid notes you can enjoy a smooth and complex dressing that is the perfect complement to any crisp and refreshing salad—no special occasion required!

Directions:

  1. Combine sour cream, mayonnaise, vinegar, sugar, salt, pepper and 2 oz of the blue cheese in a small food processor and process until smooth.

  2. Transfer to a storage container and stir in remaining 1 oz of blue cheese crumbles.

  3. Chill before enjoying. Use within 5 days.

(Makes about 1 cup.)

Ingredients:

  • 200 grams (¾ cup + 1 Tbsp) Light Sour Cream

  • 2 Tbsp (30 grams) Vegan Mayonnaise

  • 2 tsp Apple Cider or Rice Vinegar

  • ¼ tsp Sugar

  • 3 oz. (84 grams) Blue Cheese, crumbled.

  • ¼ tsp Table Salt

  • ⅛ tsp Fine Ground Black Pepper
