Easy Turkey Breakfast Sausage Patties

A good breakfast sausage is a great protein packed way to start the day. Paired with scrambled eggs and toast, on a breakfast sandwich or next to a short stack of pancakes—high protein sausage patties will keep you going until lunch and beyond.


Quality breakfast sausages can be expensive, but they don’t have to be if you make them yourself. Making them yourself is not only cheaper, but gives you control over the quality of your ingredients. I developed this easy breakfast sausage recipe to use in my Thanksgiving Cornbread Dressing one year when I couldn’t find any quality breakfast sausage in the store. It also makes excellent, juicy sausage patties for a satisfying breakfast.


Once you see how easy and economical it is to make your own sausage patties, you’ll never buy prepackaged sausages again!

Directions:

  1. Combine sage, salt, sugar, pepper, thyme and onion powder in a small bowl and mix thoroughly to combine.

  2. Place ground turkey in a medium bowl and sprinkle spice mixture evenly over the surface. Mix thoroughly to combine.

  3. Drizzle melted butter, evenly over the surface of the meat and mix thoroughly to combine. Little pieces of butter should solidify and be evenly distributed throughout the sausage mix.

  4. Cover with plastic wrap and refrigerate for 30 minutes.

  5. Divide the sausage mixture into 8 even portions (about 66 grams or ¼ cup each). Using lightly oiled hands, shape each portion into a 3 ½”-4”patty.

  6. Heat a griddle or skillet on medium heat. Add 1 tablespoon butter and 1 tablespoon olive oil to hot skillet and add sausage patties. Cook for 4-5 minutes on the first side, flip and continue to cook for 3 minutes on the second side until the center of each patty reaches 180° F.  Remove from pan and serve hot!

(Makes 8 Patties)

  • 1 lb 94% Lean Ground Turkey

  • 2 tsp Dry Rubbed Sage

  • 2 tsp Table Salt

  • 1 Tbsp Light Brown Sugar

  • ½ tsp Fine Ground Black Pepper

  • ½ tsp Dried Thyme

  • 1 tsp Onion Powder

  • 3 Tbsp Butter, melted.

  • 1 Tbsp Butter + 1 Tbsp Olive Oil for frying.
