Less Bitter Dry Roasted Walnuts

Walnuts are an excellent source of healthy fats. That being said, many people don’t like them because of their bitter, astringent aftertaste. Looking to add more healthy plant based omega 3’s to my husband’s daily cache of snacks, I started dry roasting my own walnuts. By chance after sorting through a particularly dusty batch of nuts I decided to rinse them thoroughly before roasting. Lo and behold the results were the best walnuts I’d ever had. It occurred to me that perhaps walnuts much like quinoa were coated in a bitter compound that must be rinsed away before cooking to allow the mild flavor to come through. Ever since then I’ve rinsed my walnuts before roasting and have never experienced the mouth drying effects of bitter walnuts again. Try this and you’ll be able to add healthy walnuts to your diet even if you’ve never liked them before.

Directions:

  1. Sort walnuts and discard any discolored pieces or pieces with cobweb type string on them.

  2. Place walnuts in a colander.

  3. Rinse under cool running water, tossing to ensure every walnut is rinsed for 5 minutes.

  4. Drain thoroughly.

  5. Transfer walnuts to a parchment lined baking sheet.

  6. If desired, sprinkle evenly with table salt and toss to coat.

  7. Transfer into a 325° F oven and roast for 15-20 minutes or until the parchment paper is dry and nuts have begun to look shiny.

  8. Cool and store in an air tight container in the refrigerator.

(Yields 12-16 oz of Walnuts)

  • Water for rinsing.
