Easy Homestyle Chicken Stir Fry
When you feel like take-out, but are also trying to cut back on your restaurant expenditures—this simple and quick chicken stir fry will hit the spot. Best of all, it’s easy to keep the few key ingredients this recipe calls for on hand so that you are always ready to throw together this homestyle dish. Stir fries don’t have to be complicated. The same run of the mill celery, carrots and onions you use in all your other dishes, are transformed into exotic treats when seasoned with tamari, mirin and sesame oil. In less time than it takes to get dressed to go out to eat or argue with your spouse or friends about what to order, you can have a delicious homemade chicken stir fry. Directions:
Whisk together cornstarch, dry ginger, onion powder, granulated garlic, salt and pepper in a bowl and set aside.
Put chicken strips in a large bowl and combine with canola and sesame oils. Stir thoroughly to coat. Sprinkle spice mixture evenly over the top of the chicken and stir thoroughly to coat all the chicken evenly. Cover with plastic wrap and refrigerate for 15-20 minutes.
In a medium bowl combine soy sauce, sugar and mirin or sherry. Set aside.
Preheat 12” skillet over medium heat and spray with non-stick cooking spray. Add carrots and celery and sauté for 2 minutes stirring constantly. Transfer to a plate and cover to keep warm.
Increase heat to medium high, spray skillet lightly with cooking spray and spread marinated chicken into pan in an even layer. Cook without stirring for 3 minutes. Stir with silicone spatula and cook without stirring for an additional 3 minutes. Stir chicken again, reduce heat to medium low, cover and allow to cook for another 2 minutes.
Uncover the chicken and stir. Pour in the sauce mixture and add the green onions. Stir to combine, scraping up any bits stuck to the bottom of the pan. Turn heat to low, cover and simmer for 2 minutes.
Uncover and add carrots and celery. Stir to combine, turn off heat and cover to allow carrots and celery to warm through.
Serve immediately!

1 ½ lbs (672 grams) Boneless, Skinless Chicken Breast, sliced into ⅛” strips.
4 Tbsp Tamari Brewed Soy Sauce
2 Tbsp Toasted Sesame Seed Oil
2 Tbsp Canola Oil
2 tsp Ground Dry Ginger
2 tsp Onion Powder
¼ tsp Granulated Garlic
½ tsp Table Salt
¼ tsp Fine Ground Black Pepper
4 Tbsp (24 grams) Cornstarch
2 Tbsp Granulated Sugar
4 Tbsp Mirin or Dry Sherry
2 Carrots (100 grams) julienned into ⅛” x 2” sticks
4 Stalks Celery (100 grams) sliced on the bias into ⅛” thick slices.
10 Green Onions (100 grams), sliced.
