Everyday Mashed Potatoes

Mashed potatoes don’t always have to be the decadent heavy cream laden concoctions that grace our holiday tables. Mashed potatoes can be simple and delicious and taste rich without being quite so rich and heavy as those special occasion mashed potatoes. In my house we call these “Everyday Mashed Potatoes” because they require no special ingredients other than what you probably have in your refrigerator everyday. They come together simply and are sure to please every time. My husband says he likes them even better than holiday mashed potatoes because they aren’t as rich and you can really taste the potato. They go with everything and are perfect when you want a mashed potato that compliments and offsets a rich entree. Give these a try and you may just end up making them your holiday mashed potatoes as well.

Directions:

  1. Peel potatoes and cut them in half if they are small (the size of an egg) or quarters if they are larger (the size of a large lemon).

  2. Place potatoes in a 5-6 quart stock pot with 2 ½ quarts of water and 2 Tbsp of kosher salt.

  3. Bring potatoes to a boil and reduce to a simmer. Simmer until the largest chunks of potatoes are tender and offer no resistance when pierced with a knife (about 30-40 minutes).

  4. Drain potatoes and return to pot with burner off. Immediately mash potatoes with potato masher to about 50% of desired smoothness. Top with 5 Tbsp of butter and cover until butter is mostly melted, about 5 minutes. Mash potatoes and melted butter to desired smoothness.

  5. Stir in warm milk. Adjust seasoning if necessary and enjoy!

(Serves 4-6)

Ingredients:

  • 1000 grams (about 5 medium) peeled Yukon Gold Potatoes

  • 5 Tbsp (70 grams) Unsalted or Salted Butter, room temperature.

  • ¾ Cup (180 ml) Milk of your choice, warmed.

  • 2 ½ Quarts Cold or Room Temperature Water

  • 2 Tbsp Kosher Salt
